Mediterranean Grilled Lamb Chops with Yogurt Mint Sauce


Ingredients:

  • 8 lamb chops

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • Juice of 1 lemon

  • 1 teaspoon dried oregano

  • Salt and freshly ground black pepper to taste


For the Yogurt Mint Sauce:


  • 1 cup plain Greek yogurt

  • 2 tablespoons fresh mint, finely chopped

  • 1 tablespoon lemon juice

  • 1 clove garlic, minced

  • Salt and pepper to taste


INSTRUCTIONS

 

Step 1

In a bowl, mix olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.


Step 2

Place lamb chops in a resealable bag or dish and pour the marinade over them. Marinate for at least 30 minutes, preferably up to 2 hours, in the refrigerator.


Step 3

While the lamb is marinating, prepare the yogurt mint sauce by combining all sauce ingredients in a bowl. Refrigerate until ready to use.


Step 4

Preheat a grill or grill pan over medium-high heat.


Step 5

Remove lamb chops from the marinade and grill for 3-4 minutes per side for medium-rare, or until desired doneness.


Step 6

Let the chops rest for 5 minutes before serving. Serve with the yogurt mint sauce.
