Ingredients:
4 hindshank steaks
3 carrots
6 ripe tomatoes
1 onion
1 litre meat broth
2 garlic cloves
200 ml white wine
1 tbsp fried tomato
Flour
Chopped parsley
Black pepper
Extra virgin olive oil
Salt

STEPS
Step 1
Coat the hindshank steaks in flour and place them in a saucepan, adding a drizzle of oil. Once golden on the outside, remove them from the container.
Step 2
Finely chop the carrots, onion and garlic. In the same pan used to sear the hindshank steaks, lightly fry the vegetables with a little white wine. Cook for 2 minutes until the alcohol has evaporated.
Step 3
Add the previously grated tomatoes and let cook for 5 minutes.
Step 4
Add the lamb steaks and the meat broth until the sauce has been covered. Add salt and pepper and a pinch of chopped parsley. Bring to boil and keep the pan on low heat.
Step 5
Cover the pan and let it cook for 1 hour and half.
