Kalbi-Style Lamb Rack

Ingredients:
1 rack of lamb (8 ribs)
1/2 cup soy sauce
1/4 cup mirin (sweet rice wine)
2 tablespoons brown sugar
4 cloves garlic, minced
1 tablespoon ginger, grated
2 tablespoons sesame oil
2 green onions, finely chopped
1 teaspoon toasted sesame seeds
(Optional) Thinly sliced green onions, lime wedges, and steamed rice
INSTRUCTIONS
Step 1
In a small bowl, mix together the soy sauce, mirin, brown sugar, minced garlic, grated ginger, sesame oil, and chopped green onions.
Step 2
Place the lamb rack in a large resealable plastic bag or shallow dish. Pour the marinade over the lamb, ensuring it is well-coated. Let it marinate for at least 2 hours or overnight in the refrigerator for maximum flavor.
Step 3
Preheat your grill or oven to medium-high heat (375–400°F).
Step 4
If grilling: Sear the lamb rack, fat-side down, for about 4 minutes until browned. Flip and grill the other side for another 4 minutes.If roasting: Place the lamb rack on a baking sheet and roast for 20–25 minutes, or until the internal temperature reaches 130–135°F for medium-rare.
Step 5
Let the lamb rest for 10 minutes before slicing into individual chops.
Step 6
(Optional) Garnish with toasted sesame seeds, green onions, and lime wedges. Serve with steamed rice or your favorite sides.
