Greek Stuffed Lamb Roast with Spinach and Feta

Ingredients:
1.5kg lamb leg, butterflied
2 cups spinach, chopped
1 cup crumbled feta cheese
2 cloves garlic, minced
1 tbsp dried oregano
Zest of 1 lemon
Salt and pepper to taste
Olive oil for drizzling
INSTRUCTIONS
Step 1
Preheat oven to 180°C (350°F).
Step 2
Prepare Stuffing: Mix spinach, feta, garlic, oregano, lemon zest, salt, and pepper in a bowl.
Step 3
Fill and Roll: Spread stuffing on the butterflied lamb, roll up, and tie with kitchen string.
Step 4
Roast: Drizzle with olive oil, place in a roasting pan, and cook for 1.5 hours or until internal temperature reaches 60°C (140°F).
Step 5
Rest: Let rest for 10 minutes before slicing.
Step 6
Serve: Slice and serve with roasted vegetables and a drizzle of pan juices.
