Ingredients:
1 leg of lamb (about 4-6 lbs, see servings guide below).
4 cloves of garlic, thinly sliced.
2 tablespoons of fresh rosemary, chopped.
2 tablespoons of olive oil.
Salt and pepper to taste.

INSTRUCTIONS
Step 1
Preheat your oven to 325°F (160°C).
Step 2
Using a sharp knife, make small incisions all over the leg of lamb. Insert slices of garlic into each incision.
Step 3
Rub the lamb with olive oil, then season generously with salt, pepper, and chopped rosemary.
Step 4
Place the lamb on a rack in a roasting pan, and roast in the preheated oven for about 20 minutes per pound, or until the internal temperature reaches 135°F (57°C) for medium-rare, or 145°F (63°C) for medium.
Step 5
Remove from the oven and let it rest for 15-20 minutes before slicing.
