
Ingredients:
2 lamb shanks
Salt and black pepper to taste
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup red wine
1 can (400g) diced tomatoes
1 cup beef stock
1 sprig rosemary
Mashed potatoes, for serving
INSTRUCTIONS
Step 1
Season lamb shanks with salt and pepper. Heat olive oil in a large pot and brown the shanks on all sides. Remove and set aside.
Step 2
In the same pot, sauté onion and garlic until soft.
Step 3
Pour in red wine and scrape the bottom of the pot to deglaze. Simmer for 2 minutes.
Step 4
Add tomatoes, beef stock, and rosemary. Return the lamb shanks to the pot.
Step 5
Cover and simmer on low heat for 2.5-3 hours, turning occasionally, until the meat is tender.
Step 6
Serve over garlic mashed potatoes with the sauce from the pot.
